The two most recently tried recipes were quite good. This
pinterest one,
Spinach and Feta Quesadilla, was really good. Quick and easy to make, quite yum. I forgot to add the fresh herbs in, but I also didn't feel like it was missing anything. Look how good:

I also made
Giada's Vokda Sauce the other night. The recipe was clear and simple, very easy to make, had few ingredients, and didn't need a lot of attention while making it (which is good when you have 2 under 2!). We really enjoyed it - the flavor was not what we expected, but was really good. Even the leftovers heated up the next day for lunch was great. The only thing is that she says in her recipe to serve it over a pound of pasta to serve 4. I served it over 1/2lbs. pasta and we both ate it for dinner and lunch the next day (so it could serve 4 like that) and we felt that if there had been more pasta, there wouldn't be enough sauce. Perhaps we like more sauce than most people?! Here is that recipe:
3c. marinara sauce (or 1 jar pasta sauce)
1c. vodka
1/2c. heavy cream, room temperature
1/2t. salt
1/4t. pepper
In a heavy large skillet, simmer sauce and vodka over low heat, stirring often, until the mixture reduces by one forth, about 20 mins. Stir in the cream and continue to simmer over low heat until the sauce is heated through. Remove from heat and add parmesan, salt, and pepper. Season with more salt & pepper to taste.
Last night, I tried another Giada recipe from
Weeknights with Giada. It was called
Crispy Chicken with Rosemary-Lemon Salt. I skipped the Rosemary-Lemon Salt part, but did the Crispy Chicken. It was great - so good that Evangeline, who doesn't like any kind of chicken every, asked to try it and then kept bugging us for bites of it (she'd already eaten dinner earlier). I also skipped putting rosemary in the oil, simply because I didn't have any fresh rosemary (and so I used dry instead of fresh in the chicken too). Every once in a while I'd get a taste of the lemon, but when I told Ryan there was lemon in it he had no idea - so not sure if I should up it, or just skip it... I'm thinking skip it.
Here is the recipe for the Crispy Chicken part:
Vegetable oil, for frying
1 (6-inch) sprig fresh rosemary
3/4t. salt
Zest of 1/2 lemon
1 lb. chicken, cut into 2-inch pieces
2 garlic cloves, minced
1 1/2T. chopped fresh rosemary leaves
1/4t. pepper
1/2c. fine cornmeal or instant polenta
Heat 1/4 inch of oil in a large, high-sided skillet over medium-high heat (the oil is hot enough when a pinch of cornmeal sizzles when added to the pan).
(Add the rosemary sprig and fry for 30 seconds, until crisp. If you make the lemon-rosemary salt part of this dish, you use the fried rosemary for it. I didn't include what is needed for that in this copy of the recipe. Remove the sprig of rosemary.)
In medium bowl, mix the chicken, garlic, chopped fresh rosemary, lemon zest, salt, and pepper. Add cornmeal and toss until chicken is coated.
Add half of the chicken in the skillet and fry 2-3 mins. on each side, until crispy and cooked through
(note: I cooked the 1st batch a bit longer than this and some of them were chewy, so try and stick to the 2-3 mins.) Drain on paper towels. Repeat with remaining chicken.
She suggested serving with warm marinara sauce. I served it with ketchup ;o) And some Trader Joe's fries.
